[BKARTS] Don't want to stain inner joints

Question for the experts: I'm rebacking a cloth-bound book that has its 1850's clay-coated endsheets and inner joints intact. They're light orange, and ready to be stained even by mention of moisture! As the backside of those inner joints are exposed at the spine, any suggestions on how to keep them dry while tucking the new spine material into the grooves?
