Are you not glue the binding side of your book after sewing?  Pressing should
remove the gaps if it is glued.  If you are gluing and still getting gaps,
you need to "knock-down" your text block before sewing.  This can be done on a
heavy steed or cast iron surface employing a book hammer to beat the folds
flat. The hammer must not come into direct contact with the paper. A piece of
chipboard or leather should be between.
