Hi Laurel,
  Sympatex is the knock off version of Gore Tex.  In principle both
materials act as a breathable but yet waterproof membrane, containing a
layer of this membrane and a felt or other type of material capable of
holding moisture adhered to one side.  The membrane is waterproof,
meaning it will not allow the passage of water droplets, but yet
breathable which allows the vapor of the liquid applied to the felted
side to slowly and evenly pass through the membrane.  Therefor providing
a very slow and controlled method of humidification, and excellent for
using with vellum, parchment, and other delicate materials.  A few years
ago conservation grade Gore Tex was taken off the market due to
manufacturing complications that Gore was having, in terms of fusing the
polyester batting to the Gore Tex membrane, and the pores of the
membrane closing and rendering the product unusable.  The new version
which Gore now produces, is the membrane bonded to a Hollytex material,
which has completely eliminating the prior problem, and is
available once again.
