To start, take a look at the Univ. Iowa's bookbinding
model collection at

and Jane Greenfield's
"ABC of Bookbinding"

to develop an overview of the  evolution of bookbinding
structures and how they are described.

Additional, illustrated catalog references such as Dorothy
Miner's
"The History of Bookbinding 525-1950 AD"
could be helpful in furthering your understanding of
design, construction, and materials used.

J.A. Szirmai's
"The Archaeology of Medieval Bookbinding"
and a number of studies by Mirjam Foot, Nicholas Pickwoad,
et. al in such publcations as
Myers & Harris
"A Millennium of the Book"
and
"Eloquent Witnesses: Bookbindings and Their History"
should also be helpful for more detailed discussions of
early structures.

You may then be able to locate recent, how-to publications
and online resources that will give you detailed instructions
for construction of those that interest you.
