You can't get much more detailed than Keith Smith! 

Volume I, Non-Adhesive Binding/Books Without Paste or Glue, contains instructions for 1-needle coptic. 

Non-Adhesive Binding Volume III/Exposed Spine Sewings, contains directions for both 1-needle and 2-needle coptic, with variations. Keith sells his own books online:
