I spent several months in Paris on a sabbatical project and have a few sites to add to Paul Werner's replete list, if you have an interest in artists' books.
 
1.  Centre de Documentation at Pompidou Center   

La Bibliotheque Kandinsky (art library and special collections) - the special collections department of this art library has a good collection of artists' books, including many American and international titles.  Access is by appointment, and you need to get a Visitor's Pass on the entry level before proceeding to the library.

2.  Despalled Editions, close to Florence Loewy, is a producer/publisher of artists books  The proprietors are a husband (German) and wife (French) team who travel between both countries; they share information generously about the artists' book scene in Paris.

3.  Christophe Dariet-Thiery

A unique combination of book store and art gallery centering on artists' books.  Christophe is very knowledgeable and happily engages in conversations about critical and aesthetic issues in artists' books.

 

4.  La Galerie La Hune-Brenner often includes artists' books in its exhibitions.

6.  Comptoir des Ecritures 

35, rue Quincampoix  -  75004 Paris  -  behind the Centre de Pompidou: 

Carries handmade papers in stationery sizes and larger sheets.  Has a pure linen stationery sheet.  Can make linen paper in custom sizes.  Thai, Nepalese and many Japanese and Chinese papers for calligraphy.  Large selection of brushes, quills.  An array of interesting inks which are slightly more expensive than Sennelier's (also shellac-based).  Colors are more limited than Sennelier's.

 

7.  Both branches of the Bibliotheque Nationale have artists' books collections.

8.  Around the second week of June, the Place at St.Sulpice (near the church on the Left Bank, 7e arrondisement) hosts the Marche de la Poesie.  Over a hundred French publishers of poetry are represented, and many of the books cross over into the area of art.
